With today's travel restrictions, it's time to explore our own country during the summer. The Netherlands has always been a popular travel destination for many people, this summer we will be vacationing in our own country! Kitchen Republic will be taking you through the most fun food activities in the coming weeks for the ultimate summer feeling. 

Next stop: our Sophie Eats

For years Sophie of Sophie Eats was the sunshine in the kitchen, in November she swapped the kitchen for her own deli in Amsterdam's Rivierenbuurt neighborhood. With the deli, Sophie serves a diverse audience, mainly the busy Amsterdammer and provides them with tasty takeout, nutritious snacks or a coffee on-the-go. And of course, Sophie is also still known for her extravagant catering on location. Time to catch up! 

How do you like life in the deli?

"Very good! Of course it was hectic, but also very fun and exciting. Catering has always been my core business and that was a well-oiled machine. Running a deli is a different business with many new challenges. You have to reinvent the wheel for every part of the deli business. You throw yourself into the deep end and then you see what comes your way. Gradually, everything falls into place. 

We started last November, which is usually a quieter month. Fortunately, I have a large network and have developed a strong identity over the years. Through this identity and the reach of my social media accounts, I have quickly built a fine clientele that really come for our signature dishes, such as the blondies and sausage rolls." 

What was your biggest challenge while opening the deli?

"There's a lot coming at you. Many parties who have their own views on the things you have thought out well. The contractor, the painter, the tiler, and of course friends and family, everyone likes to think along with you. My best advice is, stick to your plan. The picture in your head is the guide and stick to it to make this picture come true."

You've obviously been away from the Kitchen Republic kitchen for a while, what do you miss most?

"The feeling of 'coming home,' it's a place full of creative and energetic people. Everyone is passionate about making a dream a reality. Members are always willing to help and share valuable tips with each other. And of course the cozy get-togethers organized by KR!"

Looks like we are spending our summer in Amsterdam, what's your summer tip?

If you manage to make a reservation, Lighthouse Island is the most fun there is. It's a magical experience and you learn a lot about the city's history. Not just in the summer, it is also incredibly cozy in the colder seasons. And of course, as soon as the sun starts to shine, head into the park with friends, drinks and snacks."
